The Philippines relies on a vast biodiversity of fishes as a staple food, but like many countries around the globe, experiences severe “leakages” of contaminants and pollutants in the environment. In order to better understand the relationship between environmental pollutants and public health, this research project measured the concentration of pollutants in a commonly consumed local fish (Siganus fuscescens), and then evaluated the potential health risks of eating this fish based on estimated average consumer weight and consumption levels. Fish sampled from four different sites located in Negros Oriental, Philippines were analyzed for organic contaminants using gas chromatography and mass spectroscopy. Pollutants quantified included polycyclic aromatic hydrocarbons (PAHs), pesticides, phthalates, and polychlorinated biphenyl (PCBs). Across the four study sites, fishes from Manjuyod showed the highest frequency of detection of different pollutants. However, phthalates and PAHs were found in similar concentrations in all four sites, with fishes from Dumaguete showing the highest level of PCBs compared to the other sampled sites. The U.S. Environmental Protection Agency’s guide for fish contaminants pinpoints several health risks associated with the chronic ingestion of these contaminants. Based on estimated average body weights of Filipino adult men, adult women, and children, and various consumption levels, people who eat the fish at or above the national average consumption level may be at increased risk for chronic health outcomes, such as cancer and/or other adverse effects. Specifically, due to the high concentration of PCBs in Dumaguete, selected populations who eat local fish from this site may be at higher risk than the citizens who eat the fish from other sites at similar consumption rates. These results can help to inform local and national policies on water quality, waste disposal, and fish consumption advisory programs.

In 2004, the South Korean geneticist Woo-Suk Hwang published what was widely regarded as the most important research result in biotechnology of the year. In the prestigious American journal Science, he claimed that he had succeeded in cloning a human blastocyst, an embryo in its early stages (Hwang et al. 2004). A year later, in a second Science article, he made the earth-shattering announcement that he had derived eleven embryonic stem cell lines using his cloning technique (Hwang et al. 2005). The international scientific community was stunned. American scientists publicly fretted that President George W. Bush‘s 2001 executive order limiting federal funding for stem-cell research in the United States had put American bioscience behind the Koreans‘ (Paarlberg 2005). These breakthroughs offered potential solutions to immune system rejection of transplanted organs and possible cures for diseases such as rheumatoid arthritis, Parkinson‘s, Down‘s syndrome, and paralysis (Svenaeus 2007). However, within a year, Hwang was exposed as a fraud who had faked his results and pressured his female colleagues to donate eggs without informed consent. Despite protests against his methods from Korean religious and nongovernmental organizations, Hwang had used his prestige to ignore his ethical obligations. The Korean government, too, was slow to investigate Hwang and to subject his work to appropriate regulation.

The purpose of this cookbook and ingredient index is to simplify the reasoning behind eating a plant based diet--including how it can be beneficial to your health, and what benefits each ingredient provides. These recipes have been cultivated and modified over time to provide nutritious meals that are also tasty.

The purpose of this cookbook and ingredient index is to simplify the reasoning behind eating a plant based diet--including how it can be beneficial to your health, and what benefits each ingredient provides. These recipes have been cultivated and modified over time to provide nutritious meals that are also tasty. I was introduced to healthy eating at a young age, and have been fascinated by it ever since. The recipes and information conveyed about a plant based diet have come from the many books read and research I have done on the subject. This paper will walk you through how I started this journey, and go on to show a basic overview of what makes up the foods we consume and why we need them. The cookbook portion of my Thesis contains recipes for breakfast, lunch, dinner, snacks, sauces, and dessert. Following the cookbook is an ingredient index that goes through the majority of ingredients used in my recipes, and what health benefits they provide. I hope that by reading this, others will be inspired to use more plant-based whole foods in their diet, and realize the healing that can come from them.

One of the largest barriers to receiving a dilated eye exam is insurance coverage. Most health insurance policies have limited optometric coverage. By expanding health insurance plans to be more inclusive of optometric care, people who use these health insurance plans will have a better access of care.

The purpose of this project was to garner a greater understanding of the form, function, and uses of school as well as community gardens. Worldwide, school and community gardens are used to promote health, nutrition, and some aspects of education. I wished to extend my knowledge of these gardens to greater lengths by building and incorporating a school garden in a community that was underderserving. Along the way I also sought to better my understanding of how to help communities through the knowledge and aid of experts and other community members. By doing this, I would hopefully both improve that community as well as understand the difficulties and problems that stand in the way of greater school garden incorporation.

The Refugee Education and Clinic Team (REACT) is a local organization led by students at Arizona State University and the Mayo Clinic Alix School of Medicine with the purpose of improving the health of refugees and asylees. One way in which REACT aims to improve the health of refugees and asylees is through health education workshops, which inform refugees about health conditions and management options. The purpose of this project was to analyze how REACT’s health education workshop about obesity impacted refugees’ understanding of healthy living. This project implemented a pre- and post-presentation survey at REACT’s obesity workshop to measure refugees’ understanding of healthy living. Overall, a pre-existing understanding of the importance of healthy eating and daily exercise was measured and an improvement in their understanding of the symptoms associated with obesity was recorded.

This project explores modern healthcare related disparities in Phoenix, Arizona, as well as the overarching historical structures that have influenced public health within the city. Historical and systemic racism, harmful housing policies, barriers preventing upwards economic mobility, and purposeful measures put in place by business leaders and city officials are all explored as factors impacting current disparities in access to care. In order to fully analyze the gaps in care, different areas, both high and low-income, are analyzed throughout history in order to understand shifting demographics and policies. The project concludes with an in-depth look at current public health efforts within Maricopa County, as well as with future policy recommendations.

This research investigates how undergraduate students maintain health and wellness within the collegiate environment, focusing on lifestyle-specific challenges and supporting factors. It explores diverse undergraduate lifestyles, such as student athletes, Greek life members, honors students, art majors, and STEM majors, analyzing factors including dietary habits, fitness routines, mental health, social interactions, and sleep patterns. Understanding these dynamics is crucial during this developmental period, where students face new lifestyle habits that can impact their long-term well-being. Recognizing the unique challenges of different groups allows universities and students to create environments that nurture success. The qualitative study, conducted through podcast interviews with students from Arizona State University, identifies both maintained and neglected aspects of wellness within each lifestyle. Limitations in sample size are acknowledged and suggested avenues for further research to enhance comprehensiveness are also provided. We use qualitative data from various studies and research that has been conducted on the different lifestyles of college students and aspects of their wellness that are hindered or facilitated through their lifestyles. Our findings indicate that every lifestyle of undergraduate students has unique challenges and advantages in regard to maintaining their health and wellness. There are multiple commonalities and differences that can be explored through the five different interviews which are both conducive and incompatible with previous literature and studies.

Ulaanbaatar, Mongolia is one of the world’s coldest capital cities with roughly 1.5 million residents. About fifty percent of the city’s residents are off the electrical grid and millions continue to live nomadic lifestyles, raising livestock for food. Problematically, residents often turn to raw coal - Mongolia’s largest export - as a means to cook food and stay warm. Project Koyash is a philanthropic engineering initiative that was founded in the Arizona State University Program Engineering Projects in Community Service (EPICS) to combat the air quality crisis plaguing the ger districts of Ulaanbaatar. Koyash has already deployed 13 fully functional and autonomous units consisting of a solar powered air filtration system in Ulaanbaatar. Koyash innovated a solution of solar panels, air filters, batteries, inverters, PCB Arduinos, and other necessary components for providing crucial humanitarian services. The team is working to send more units and develop a local supply chain for the systems. This thesis project explores the development of Koyash, assesses the human health implications of air pollution, and reflects on the entire process.
